Cheesie Summer Squash
1 med zucchini squash, cut in chunks \ 1 med yellow squash, cut in chunks \ 2 cloves garlic, chopped \ 1 small can mushrooms \ 1 15 oz. can diced tomatoes (or use 2-3 fresh tomatoes diced) \ 1 small onion, sliced \ 2 Tbsp olive oil \ 1/2 cup parmesan cheese \ 1 cup shredded mozzerella cheese \ dash or salt and pepper.
Place all place first 7 ingredients and salt and pepper in thick aluminum foil (enough to form a "baking sheet" about 12 inches long.. bake on grid over low fire or good bed of coals for about 20 mins., stirring occasionally. When vegtables are getting tender add cheeses and cook about 5 more mins. Serve and enjoy!
